Makes 4 generous sandwiches
Simply adding chicken to this classic salad makes it a perfect sandwich filling.
- 2 poached chicken breasts, cubed
- 1 cup diced celery
- 1 diced Granny Smith apple
- 1 cup seedless green grapes, split
- 1/4 cup chopped pecans
- 1/2 cup mayonnaise
- Salt and pepper to taste
- 8 slices whole grain bread
- Romaine lettuce leaves
Combine all ingredients, except bread and lettuce in a medium bowl. Toss well and season with salt and pepper. Make sandwiches with finished salad, bread, and lettuce.
