Blueberry Almond Flour Muffins

Margaret Nabors shared this simple recipe for tasty glutenfree blueberry muffins that everyone loves. My mother-in-law, Grandma Rose, and I baked them together. We invite you to give them a try, and we hope you have as much fun as we did!

Makes one dozen muffins.

  • 2 eggs
  • 1/3 cup honey
  • 4 tablespoons butter or coconut oil
  • 1 teaspoon pure vanilla
  • 3/4 teaspoon baking soda
  • 1/2 teaspoon sea salt
  • 1 tablespoon lemon zest
  • 2 cups almond flour (if I double the recipe I use 4 cups almond flour and 1 cup oat flour)
  • 1/2 cup chopped pecans
  • 1 cup organic blueberries

Heat oven to 325°. Combine eggs, honey, butter (or oil), vanilla, baking soda, sea salt, and lemon zest. Fold in almond flour (and oat flour if using), pecans, and blueberries. Spoon into muffin tins. Bake 20–30 minutes. Eat joyfully!
