A yummy, healthy base of oatmeal and some kind of milk make a platform for breakfast adventures. A few ideas for toppings follow the recipe. Serves 4
- 2 cups rolled oats
- 2 cups milk, such as coconut, almond, or cow’s, or water
- ¼ teaspoon salt
In a medium saucepan, combine oats, milk, and salt. Bring to a simmer over low heat and cook, stirring 3–4 minutes, or until liquid is absorbed. Top as desired.
Topping Suggestions: Fresh or frozen berries • Nut or seed butter, such as peanut or sesame • Toasted unsweetened coconut • Nuts or seeds, such as pecans, flax, or chia • Drizzle of honey or maple syrup • Greek yogurt
