Cayenne Maple Bacon

The combination of sweet, heat, salt and fat makes this bacon almost irresistible. Look for locally and humanely raised hogs. Also, I prefer the heartier B Grade maple syrup.

  • 1/2 pound thick cut bacon
  • 1 teaspoon cayenne pepper, or more to taste
  • 1/2 cup pure maple syrup

Preheat oven to 350°. Line a baking sheet with parchment paper. Lay the strips of bacon on the sheet on a single layer. Sprinkle with cayenne. Cook the bacon for 20–25 minutes, without turning, or until the strips are just starting to crisp. Pour maple syrup over, return to the oven, and watch carefully for 4–5 minutes. The bacon will brown rapidly. Remove from oven and drain well on paper towels. Serve warm.
