Cranberry Molded Salad

Serves 8-10

  • 1 apple
  • 1 orange
  • 4 cups cranberry
  • 1½ cups sugar
  • 1 6-ounce box lemon Jell-O
  • 1½ cups boiling water

Quarter the apple and orange. Remove seeds from the apple quarters. Toss the quarters, including rinds, into a food processor, and pulse until coarse. Add the sugar. Let stand for 1 hour. Make Jell-O according to the box instructions. Add cranberry mixture, and chill.

My mother despised cooking, so this simple, yet flavorful relish was exactly the kind of thing she wanted to be able to whip up. She served it all year long with roasted chicken. —Melissa McClelland
