Makes about 2 cups
The key step with this recipe is leaving the cucumbers to drain, which gives you a perfect window of time to prepare other picnic goodies.
- 4 baby cucumbers
- Kosher salt
- 2-3 tablespoons olive oil
- 2 tablespoons white wine vinegar
- Salt and pepper to taste
Thinly slice cucumbers (preferably on a mandoline) and place in a colander over a bowl. Sprinkle lightly with salt, toss and let sit 20 minutes. Place drained cucumbers in a medium bowl (juice can be reserved for a cocktail). Toss with oil and vinegar and season to taste with salt and pepper. Chill slightly if you have time.
