Ginger Applesauce

24 1/2 cup servings

  • 6 pounds of apples, peeled, cored and cut into chunks (Honeycrisp is Tam’s preference)
  • 1 cup of apple juice
  • 1 lemon, juiced and seeds removed
  • ¼ cup of brown sugar
  • 2 teaspoons of cinnamon
  • Fresh ginger to taste, peeled and finely chopped

Combine ingredients and cook in a saucepan for 25 minutes over medium heat, stirring occasionally. Mash to desired consistency once cooled.
