Green Tomato Pie

Serves 8

  • 2 tablespoons butter
  • 8 medium green tomatoes, chopped into 1⁄2-inch pieces
  • 2 tablespoons lemon juice
  • 1 teaspoon grated lemon zest
  • 1⁄2 teaspoon salt
  • 1⁄2 teaspoon cinnamon
  • 1⁄4 teaspoon freshly grated nutmeg
  • 1⁄2 cup granulated sugar
  • 2 tablespoons cornstarch

Graham Cracker Crust

  • 1 3⁄4 cups graham cracker crumbs
  • 1⁄4 cup powdered sugar
  • 6 tablespoons butter, melted

Streusel

  • 1 cup flour
  • 1⁄2 cup brown sugar
  • 1⁄2 teaspoon cinnamon
  • 1⁄2 cup butter

Melt the butter in a large skillet. Add the tomatoes, lemon juice, lemon peel, salt, cinnamon, and nutmeg and sauté over medium heat until slightly softened. Combine the sugar and cornstarch and stir into tomato mixture. Cook until the juices are clear, stirring constantly. Remove from the heat. Combine the graham cracker crumbs, sugar, and melted butter. Press into the bottom and sides of 9-inch pie pan. Bake at 375° for 15 minutes. Pour in cooked green tomatoes. Combine flour, brown sugar, cinnamon, and butter until crumbly. Sprinkle over pie. Bake at 350° for 40 minutes, or until bubbly.
