- 2 cups mint basil simple syrup
- 5 cups white rum
- 3 cups cucumber juice
- 5 cups lemon juice
To make the simple syrup combine 2 cups of sugar and 2 cups of water. Bring to a simmer and add a large handful each of mint and basil leaves (leaves can be left whole!). Remove from heat and allow to steep for about an hour. Strain out leaves and extra syrup can keep in the refrigerator for up to a month.
Cucumber juice can be made by using a juicer or placing cucumbers in a blender and pushing through a fine mesh strainer. Add simple syrup, rum and both juices to a large container and mix together. When ready to serve, pour over ice and top with soda. Garnish with a basil or mint leaf. Enjoy!
