This cake welcomes endless variations. Try adding roasted ground nuts; dried fruits such as cranberries, cherries or raisins; or combine fresh lemon zest, vanilla and cinnamon.
Makes one cake in a 9- by 9-inch pan.
- 2 cups all-purpose flour
- 1 cup sugar
- 2 teaspoons double-acting baking powder
- ½ teaspoon baking soda
- ¼ teaspoon salt
- 1 cup sour cream
- 2 extra-large eggs
- 2 tablespoons flour
- 2 tablespoons soft butter
- 5 tablespoons sugar
Combine dry ingredients; add wet ingredients and blend briefly to combine. Add nuts, fruits or whatever you like for flavor or seasoning to taste. For topping, rub the ingredients together to create crumbly mixture. Butter and flour your pan; add batter and topping.
Bake for 20–30 minutes at 350° until the top springs back and a toothpick comes out clean.
Serve warm with some fresh fruit garnish.
