Sour Cream Cucumbers

Serves 8

  • 4 medium cucumbers, scrubbed and sliced very thin
  • 1 tablespoon kosher salt
  • 1 small red onion, thinly sliced
  • ½ cup sour cream
  • 3 tablespoons white vinegar
  • ¼ cup chopped fresh dill
  • Salt and pepper to taste

Place sliced cucumbers in a colander, and toss with salt. Let sit over a bowl for 15–20 minutes. Place sliced onions in a bowl of ice water. Meanwhile, combine the sour cream, vinegar, and dill in a medium bowl. Rinse and drain the cucumbers, drain the onions, and add both to the dressing. Season to taste with salt and pepper.
