Spam Fried Rice

Serves 8–10

  • 1 can of SPAM, finely diced
  • 9 cups of cold, pre-cooked long grain white rice
  • 1 bunch of green onions, finely sliced with roots removed
  • 4 eggs, beaten, fried and chopped
  • Corn oil
  • Soy sauce to taste

Coat wok with oil. With heat on high, add green onions, stirring constantly until fragrant. Add SPAM. Stir fry for 2–3 minutes. Add rice and mix well. Stir eggs in gently to incorporate with rice. Season to taste with soy sauce.
