Triple Celery Salad

Serves 4

Celeriac, also known as celery root, comes alive when combined with celery stalks and celery seeds.

  • ½ medium celeriac, peeled
  • 4 stalks celery, trimmed
  • ½ cup chopped flat leaf parsley
  • ⅓ cup olive oil
  • 3 tablespoons lemon juice
  • 1 tablespoon celery seed
  • Salt and pepper to taste

Shave celeriac and celery into paper-thin slices using a mandoline. Toss with chopped parsley in a large bowl. Whisk together oil, lemon juice, and celery seed. Season with salt and pepper. Toss with celery mixture.
