Vanilla Rolls

2 cups flour

1 teaspoon sugar

1/2 teaspoon salt

2 sticks unsalted butter

1/2 teaspoon vanilla

6 egg yolks, well-beaten

6 egg whites, unbeaten

2 cups ground walnuts

1 3/4 cups confectioner’s sugar

Preheat oven to 350° Sift flour, sugar, and salt. Cut in butter, vanilla, and egg yolks. Mix, then knead, for a few minutes. Set aside. For filling, mix egg whites, walnuts, and confectioner’s sugar. Take a tablespoon of dough, and roll on a board dusted with confectioner’s sugar until very thin. The batter and rolling is difficult to work. I prepare the tablespoon-sized balls one at one time, and keep them refrigerated until ready to roll out onto the lightly floured surface.

Plan a small amount of filling in the center, and fold edges to create small boxes, or roll up like a cigar shape. Bake on uncreased cookie sheets for 20–25 minutes. Cool. Dust with confectioner’s sugar.
