Cooking in a parchment paper packet is a beautiful way to eat healthy. It is easy to make well-portioned meals when you combine any delicate protein, such as chicken, fish, or tofu with vegetables and aromatics. Cleanup could not be easier.
Begin with a 14×12 piece of parchment paper. Fold it in half, and cut out a heart shape. Place your largest item (usually the protein) on one half, close to the fold. Add thinly sliced or diced vegetables, herbs, salt and pepper. a little butter or oil, and a splash of wine or stock. Be sure to leave I inch of space around the edge.
Fold the top over the ingredients. Beginning at the top of the heart. make a series of small folds along the edge to form a seal. Lightly brush the outside with oil. This helps the packets to puff. Transfer your packets to a baking meet. Cook in a 350° oven.
Boneless chicken breasts, pounded to an even thickness, need about 20 minutes to cook, while fish requires 10 minutes per inch of thickness. The packet will be puffed and lightly browned when cooking is complete. Each packet is a single serving and can go straight from the oven to the table. Open the packets away from your face to avoid escaping steam.
