Blue Door Café & Bakery Pancakes

  • 1 cup cake flour
  • 1 teaspoon sugar
  • 1/2 teaspoon salt
  • 3/4 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1 egg
  • 1 cup Velvet View Farms yogurt
  • 1 ounce melted butter

Sift together dry ingredients. In a separate bowl beat egg, then beat in yogurt. Add dry mixture and blend; then add melted butter. Fry in butter on griddle.

It is very important to use the Velvet View Farms yogurt because it is very thin and made without stabilizers. If you use regular, thick yogurt, you will have to add more liquid at the end to make your batter thinner. Also, using cake flour is critical because in pancakes, you do not want gluten development, which can make your pancakes tough. Cake flour is made from soft winter wheat with a low protein content making it the best flour for pancakes.
