Jerk seasoning works as well on shrimp as it does on chicken. Because this marinade contains sugar, the mixture can burn easily so keep a close eye. This recipe can easily be scaled up to serve a crowd.
- 3 tablespoons Caribbean Jerk Vinegar
- 2 tablespoons olive oil
- 1 tablespoon brown sugar
- 1 pound large, wild-caught shrimp, shelled
In a plastic bag, combine vinegar, oil, and sugar, mixing well. Add shrimp and toss well to coat. Marinate in the refrigerator for 1 hour. Heat a grill or grill pan and cook for a couple of minutes per side, or until they are just cooked through.
