Makes about 2 cups
This is not quite hummus–it has no tahini–but it is a flavorful dip that comes together in minutes.
- 1 can chick peas, undrained
- 2 tablespoons olive oil
- 2 tablespoons lemon juice
- 1 tablespoon chopped parsley
- 1 tablespoon chopped scallion or chive
- Salt to taste
Combine all ingredients in a food processor and purée. If the purée is too thick, add a bit more oil. Season to taste with salt. Serve with pita chips.
