Chick Pea Dip with Pita Chips

Makes about 2 cups

This is not quite hummus–it has no tahini–but it is a flavorful dip that comes together in minutes.

  • 1 can chick peas, undrained
  • 2 tablespoons olive oil
  • 2 tablespoons lemon juice
  • 1 tablespoon chopped parsley
  • 1 tablespoon chopped scallion or chive
  • Salt to taste

Combine all ingredients in a food processor and purée. If the purée is too thick, add a bit more oil. Season to taste with salt. Serve with pita chips.
