Drink Recipe: The Bibby

Jes Walsh from The Plum mixes up some of her favorite botanical cocktails

Makes 1 drink

  • 1-1/2 ounces Watershed Distillery vodka
  • 2 ounces fresh cucumber juice*
  • 1/2 ounce lime juice
  • 1/2 ounce simple syrup
  • 2 sprigs fresh mint

Combine and shake. Strain into a highball glass over ice. Top with soda water. Garnish with a cucumber slice, mint leaf, and a lime wedge.

*If you don’t have a juicer, make cucumber juice using a blender, a sieve, and some cheesecloth, and store in the refrigerator.
