Fried Plantains

Serves 4

Long, thin strips of starchy plantains fry up quite quickly and can be tossed with many seasonings. Smoked paprika is a favorite.

  • Peanut oil for frying
  • 4 green plantains
  • 1 tablespoon salt
  • 1 teaspoon smoked paprika

Heat oil in a deep fat fryer to 350°. Slice plantains lengthwise into thin strips on a mandoline. Fry for 3–4 minutes, turning often, or until well browned. Drain on paper towels and sprinkle with salt and paprika.
