- 6 pounds of apples, peeled, cored and cut into chunks (Honeycrisp is Tam’s preference)
- 1 cup of apple juice
- 1 lemon, juiced and seeds removed
- ¼ cup of brown sugar
- 2 teaspoons of cinnamon
- Fresh ginger to taste, peeled and finely chopped
Combine ingredients and cook in a saucepan for 25 minutes over medium heat, stirring occasionally. Mash to desired consistency once cooled.
