Start with a sterilized 1-quart jar, add your flavorings of choice, and top with homemade vinegar, unfiltered cider vinegar, or distilled white vinegar. Cover tightly and let sit at room temperature for one week before using. Here are four ideas for flavored vinegars:
For Caribbean Jerk Vinegar, add:
- 4 habanero chiles, halved, 4 garlic cloves, halved, 1-inch knob of fresh ginger, peeled and sliced, 4 sprigs thyme, 1 tablespoon allspice berries, 1 tablespoon black peppercorns.
For Lemon Orange Vinegar, add:
- the peels of 4 small organic oranges and 2 large organic lemons.
For Poultry Seasoning Vinegar, add:
- 10 sprigs thyme, 4 sprigs sage, and 4 sprigs rosemary or one ¾-ounce container of poultry seasoning herb mix.
For Garlic Vinegar, add:
- 10 garlic cloves, peeled and threaded on bamboo skewers.
