Lemongrass Chicken

  • 2 tablespoons cooking oil
  • 1 tablespoon chopped garlic
  • 1 pound sliced chicken breast
  • 3 stalks fresh lemongrass, chopped (can substitute 2–3 tablespoons frozen chopped lemongrass)
  • 1 cup sliced white onion
  • 1 tablespoon chopped fresh chili
  • pepper or jalapeño (optional)
  • 1 tablespoon soy sauce
  • 1 tablespoon fish sauce
  • 1 teaspoon sugar
  • Fresh cilantro (to garnish)

Heat the pan with the oil and fry the garlic until golden brown. Add chicken and all other ingredients and sauté until chicken is cooked. Garnish with fresh cilantro and serve with steamed rice.
