Long Island Cheese Pumpkin Pie

  • Your favorite pie crust (see Chill Out).
  • 1 egg yolk, whisked
  • 2 large eggs
  • 2 cups cheese pumpkin, roasted and pureed
  • ¼ cup heavy cream
  • ¾ cup whole milk
  • ⅓ cup brown sugar
  • 1 teaspoon cinnamon
  • 1 teaspoon ginger
  • ½ teaspoon nutmeg
  • ¼ teaspoon cloves
  • ½ teaspoon salt

Preheat oven to 375°. Roll out pie crust. Place in glass pie pan. Brush bottom of unbaked crust with whisked egg yolk. Set aside. Whisk two large eggs. Add remaining ingredients and mix thoroughly. Pour pumpkin mixture into the pie crust. Bake for 45 minutes or until center is set. Let cool. Serve with whipped cream.
