Mom’s Meatball Recipe

(that she never uses, because she cooks by memory)

Makes 42, 2-ounce meatballs

  • 2 pounds ground beef
  • 1 pound ground pork
  • 3 eggs
  • 1 cup bread crumbs (or “until meatball consistency”)
  • 1 cup chopped onion, or to taste
  • Parsley, to taste
  • 1-3 cloves minced garlic (3 cloves if you’re Italian, otherwise probably 1 or 2)
  • 1 cup Parmesan cheese
  • 2 cups marinara sauce
  • Love — all you’ve got

Mix all ingredients. Form golf ball-sized balls. Bake at 350° until done. Cook in marinara sauce until served. Pour marinara over meatballs.
