Nature’s Bin Vegan Walnut Pesto

  • 1 cup walnuts
  • 4 cups Italian parsley
  • 4 cups spinach
  • 4–8 garlic cloves (depends on how much you love garlic)
  • 1 cup olive oil
  • 4 tablespoons lemon juice
  • 2 tablespoons nutritional yeast

Combine all ingredients and blend until smooth. Taste and adjust with salt, additional lemon juice or olive oil as needed. You can add up to 1 cup more of walnuts if you like an extra nutty flavor. Then combine with your favorite fresh local pasta for a simple, fast, and delicious summertime dish.
