Raw Tomato Sauce

Serves 2

While the pasta cooks, this easy sauce is readily tossed together

  • 1 pint cherry tomatoes, halved
  • 1/4 cup chopped fresh herbs, such as basil, thyme, Parsley
  • 2 tablespoons chopped Kalamata olives
  • 2 tablespoons olive oil
  • 1 1/2 tablespoons balsamic vinegar
  • 1 garlic clove, minced
  • Salt and pepper to taste
  • 1/3 pound linguine

In a large bowl combine tomatoes, herbs, olives, oil, vinegar, garlic, and salt and pepper to taste and let mixture sit for 20 minutes. Meanwhile, in a large saucepan of boiling salted water cook the linguine for 10 minutes, or until it is al denté, drain, and toss with the sauce. Serve warm or at room temperature.
