Saucission’s Date Mostarda

  • 1 cup dried dates
  • 3 tablespoons whole mustard seed
  • 2 cups white wine
  • 1 tablespoon honey
  • Salt and pepper to taste

Combine all ingredients in a small pot. Cook over low/medium heat until wine is reduced by three fourths. Allow to cool slightly. In food processor pulse ingredients a few times, longer if a smoother texture is desired. Season with salt and pepper. Chill completely before serving. Great with cheeses and cured meats.
