
Strawberry Soup
Serves 6
Fruit soup makes wonderful use of the strawberry harvest and can be prepared in minutes.
- 1 quart strawberries, hulled
- 3 cups orange juice
- 2 cups plain Greek yogurt
- 1/3 cup honey
- Garnish as desired
Purée strawberries in a blender with some of the orange juice. Pour into a large bowl and whisk in remaining orange juice, yogurt, and honey. Chill well.
